FOOD FOCUS: LEEKS

This is a new feature to the blog posts I think we will all enjoy. This feature will focus on a particular food be it fruit, seasonings, super food etc.  How many times have you seen a particular vegetable or fruit at the market and have wondered how to prepare it?

This week I would like to discuss leeks:

Leeks are in season now through the end of May.

They are 50 calories per cup, great source of Vitamins A and C, plus iron and folate.

Leeks also contain inulin, which is a type of fiber thats great for digestion. They can eaten raw or sauteed.

When buying leeks you should look for firm stalks and leaves.

To prepare them, discard the outer dark green leaves and cut lengthwise. Soak in cold water until the dirt is gone and drain.
